Arid and hot, the island of Santorini is an inhospitable place for most wine grapes. Yet Assyrtiko, its indigenous variety, possesses an uncanny knack for retaining acidity and nuance, despite the punishing conditions. The vines are trained close to the ground and, as the picture on the label illustrates, are traditionally woven into a wreath shape, rather like a bird’s nest. This protects the vines and fruit from the unrelenting winds that whip across the island and conserves what little water is made available to the plant. Santo's Assyrtiko is bright with bitter grapefruit, green pineapple and lime leaf. The mouthfeel plays mischievously against expectations, providing ample body, length and fine texture. It's an absolute pleasure to drink.

Assyrtiko

Pronounced "a SEER tee ko". This white varietal is native to Santorini and the other Aegean Islands. Used to make crisp dry wines similar in style to dry Riesling, it is often blended with other varietals - both indigenous and international - such as Sauvignon Blanc. This grape is also used to make the popular Greek dessert wine, Vinsanto.
