I’m going to let you in on my unbelievably amazing pairing of the season. I highly recommend this experience. It doesn’t even require cooking, which is even better. At a recent event I had the pleasure of trying Massican Sauvignon Blanc with a bag of salt and vinegar potato chips. (Insert mind blown emoji here.) Sure, I understand the salty, tangy food plus wine with bright acidity theory, but I never would have put these two together. Perhaps it’s no surprise that Dan Petroski, a California winemaker who focuses specifically on white varieties and puts thought into every aspect of his production process down to the label shade, would produce a wine that’s equally at home on a high-end tasting menu or with an ordinary snack. Not every wine pairing has to be fancy. The proof here is in the bottle and the bag (of chips, in this case).

Few varietals have spawned as bizarre a list of descriptors as Sauvignon Blanc. Believe it or not, “cat pee” is in fact a complimentary tasting note, associated with some of the best bottlings.
