L'Écume des Nuits Rouge, Julien Pineau - 2019

From vines planted in the early '80s on clay, flint and limestone soils. The fruit was fermented whole-cluster and went through carbonic maceration for 5 days. After fermentation, the Cabernet Franc was aged in a wooden vat. Although this wine was produced within the Touraine appellation, it was intentionally declassified to a Vin de France. No sulphur was added to this wine.

This Cab Franc is unlike any other I’ve ever had, in the sense that (1) I adore it, and (2) it’s carbonically macerated. Carbonic maceration is a long-winded way to say that after the grapes are picked, they’re put into a steel tank and deprived of oxygen until the fruit begins to ferment in its own skin. What this does is amplify fruit flavors like strawberry and raspberry while minimizing the presence of tannins in the wine. You may recognize this style of wine if you drink a lot of “Nouveau” red wine from California or Beaujolais. The characteristics normally associated with it are a lighter body, a “juicier” flavor, and medium to high acid to balance everything out. This particular wine checks all those boxes and more, with its strawberry jam and fresh blackberry profile as well as its light garnet color. The perfect weeknight wine.
