Eric Thill, without hesitation, calls his Poulsard his favorite creation. If you are unfamiliar with Poulsard, a grape native to the Jura, try it and you might agree with Thill. Thill’s Poulsard is fresh, light bodied, slightly fruity, and slightly peppery, with gentle, fuzzy tannins. He’s only been making wines since 2009, but shows off a true mastery of his craft. The wine is made from 40-year-old vines, undergoes carbonic maceration, and is fermented with native yeasts in cool temperatures. It’s an anytime, any weather type of wine. If you can grab a hunk of nutty, aged Jura Comte cheese to pair with the wine, you may never be the same.
