Pinot Noir "Lisica," Sanctum - 2019

Pinot Noir has been cultivated on the hills of Lipoglav, Lower Styria since the French monks planted them in the 12th century. The grapes of this wine were hand-harvested then destemmed and spontaneously fermented in open top fermenters. After a 3 week maceration on the skins, the wine aged for 12 months in old French oak barrels. Bottled unfiltered.

In the 12th century, vines of Pinot Noir and Chardonnay were planted by French monks in the region Lipoglav, Lower Styria out of Slovenia. These vines reside on steep hills with good southern exposure, comprised of mainly marl and clay soils. This Pinot Noir is Sanctum's first foray into minimal intervention winemaking as the grapes are all hand-harvested and allowed to spontaneously ferment in open air tanks. Aged for a year in used French oak, this Pinot Noir comes off like a intensely savory garden salad. Complex notes of tomatoes, red chili flakes, basil, radishes, mossy earth and cranberry intertwine to make this a stellar food wine for hearty stews, roasted veggies, and smoked peppery sausages.
