Laurence and Rémi Dufaitre make all of their wines in the exact same traditionally carbonic fashion. Particular attention is paid to the indigenous yeast, and the wine is fermented and rested in concrete tank for 6 months. The site and age of the vines are the only variable factors. This Juliénas comes from 65 year old Gamay vines and is a dry red perfectly suited to the table. Fresh and lively, yet not overtly fruit-forward, pair it with roasted chicken and plums.
