A crémant made entirely of Pinot Noir from the tiny village of Irancy. What more could you ask for? This part of Burgundy is better known for the steely, crisp whites of Chablis, but Irancy is the only village here where Pinot Noir is planted. They make some of the most delicate red wines, and, as in this case, some delectable bubbles. The unique Kimmeridgian soil here is a collage of limestone and clay that were formed eons ago. It imparts mineral notes and acidity in the wines. Thierry Richoux's crémant is prickly and tangy on the palate with notes of tart quince and a fine mousse. It will stand up to almost any food pairing you throw at it.
