Entirely old vine Palomino grown in Valdeorras, this D.O. does not permit white grapes. It is hand-harvested, fermented with native yeast in tinajas on the skins for one week. The wine, with lees, ages for 5 months over the winter. This structured amber wine is dry, fresh, and fruity, yet has a defiant wild streak. Pair this with Galician steamed mussels.
