Pinot Squared is 2/3 Pinot Gris and 1/3 Pinot Noir co-fermented, and left on the skins for 2 months. It spent 12 months aging in used barrel before bottling. A very light-bodied red that defies categorization, it is both delicate and natural in style. Pair with muhammara and feta.

Jakub Herzán is amongst the renaissance of natural winemaking in East Europe. He has been working his family estate in the Moravian village of Kobyli since 1997. He’s always practiced organic and biodynamic farming and has vinified with minimal intervention. His P2 wine is a brilliant and inventive blend of 66% Pinot Gris and 33% Pinot Noir. Both wines are vinified and aged separately. They see 30 days of skin maceration and are aged in old oak barrels for 1 year. The wines are blended before bottling with no sulfur added. In the glass, the wine appears cloudy with a pale pink/straw color. It has seductive aromas of lychee, strawberries, fruit cocktail, and hibiscus. The palate exhibits flavors of fruit, apple skins, and baking spices. A sense of energy comes from a stony minerality and fresh acidity. Serve with soft sheep's cheese.
