Tasting Notes

This un-aged expression from the Highlands is one of its kind. Their focus on yeast and fermentation far surpasses any other tequila distillery in the region and is a major contributor to the flavor. Herbaceous and lime notes penetrate the senses. We cannot speak higher of this tequila.

Calle 23 is the product of a love-triangle between a French woman, microbiology, and some very lucky agave hearts. Sophie Decobecq brought her years of experience in yeast and microbiology to the arts of fermentation and distillation to make one of the most delicious tequilas on the market today. This "blanco" is perhaps the best of the expressions Calle offers as it preserves the life and personality of the agave itself--features often lost in even relatively short barrel aging. The palate is round and warm with soft minerals and finishes with tequila's prized notes of citrus and pepper. Calle is easy sipping on its own, but also makes killer margaritas and (for the slightly more ambitious) tequila negronis.....
