Who lives in a pineapple under the sea? I would if the bar stocked this delicious liqueur. Fresh, roasted, and candied pineapple flavors harmonize, ready to add a pineapple slap to margaritas, whiskey sours, and of course piña coladas. My love affair with this bottle may have started at the bar but now it keeps popping up in my kitchen. Roast pears? Dice up some pears, put them in an oven-proof ramekin with a nice pat of butter or three, pour on this liquor and roast, stirring often, until pears are tender and starting to brown. Serve over pistachio ice cream. Shrimp and pineapple stir fry? Fry shrimp in a hot pan, remove, toss pineapple chunks with corn starch, brown them in the same pan, deglaze with a nice pour of this liqueur, and season to taste. Be like a pineapple, stand tall, wear a crown, and be sweet on the inside.
