Just when you thought that modern interpretations of classic London Dry Gin had been done to death, along comes Cotswolds. What they pull off here is one of the hardest things to do, staying true to the traditional style while elevating with there own unique contribution. Everything from the long maceration, slow and low distillation using about ten times the weight of botanicals compared to many typical London Drys, and leaving the finished gin unfiltered add up to a gin with a lot of flavor wrapped up in one of the most luxurious and silken textures we have ever tasted. The spirit itself starts with juniper, explodes with enlivening citrus that hangs on the mid-palate, transitions to pristine lavender and comes full circle back to piney juniper on the extended finish. This is simply exceptional stuff.
