Tasting Notes

As with all the La Higuera spirits, this sotol is hand harvested, cooked with local wood, and manually broken down before being wild fermented in open air oak vats and double distilled in small copper pot stills. Batch 2 of the Cedrosanum mixes cooked persimmon, salted caramel and smoky minerals on the nose with tarragon, currants and wet clay on the palate.
