It's been years since we've had our own exclusive cask from this distillery and while the quality has remained extremely high, the age of the whiskies have doubled. This 9yr is one of the older bottlings to date from the distiller. Bottled from a single first fill ex-Bourbon cask un-chill filtered and at a natural strength of 59.6% abv, the total yield for the barrel was 228 bottles.
On last tasting we were captivated by the precise notes of lemon peel, apricot, almond brittle, passion fruit buttercream and vanilla all offset by layers of peat smoke.

A lot of whisky releases are guilty of gilding the lily. Beverage companies that look at perfectly good whisky in the eye and say, “You need to be fancier!” So they dress it up with casks from faraway lands and permanently mar their product before it gets to market.
This is why I love our new store pick of Kilchoman. Aged nine years in an ex-bourbon cask…and that’s it! This simple maturation has produced a bouquet of smoldering peat, olive brine, baked Alaska, and chocolate cookies. The palate is a seesaw of sweet and savory. Think roasted marshmallows, salty peat, chocolate malt, sugary smoke, and a heavy char.
No unnecessary flourishes here, just damn good whisky.
