For those that have had some of the finer bottlings coming out this cellar in Beaune, you can quickly become fanatical about tracking down any special releases that surface. This single cask expression is a perfect example of why. Distilled in 2002, the spirit was aged 19yrs in a PX Sherry cask, in Couvreur’s humid cellar. Bottled at a natural cask strength of 45.65% abv due to the humid cellar. This is an extremely limited release. On last tasting we were reminded of notes of honeysuckle, coconut cream pie, spiced vanilla tea, salted cultured butter, nectarines, honeydew and bitter almond.

The modern whisky drinker wants something new and they want it right now. This has driven many companies to age their budding whiskies in whatever they can get their hands on. So when you see one of your favorite whiskies aged in cask X, it is sometimes difficult to know whether it is an attempt to get your attention or something seriously worthwhile. This 20+ year whisky spent 5 years in a Chenin Blanc cask. Smell sliced apples, yeasty starter dough, and fruit gummies. The palate doubles down on complexity with caramelized sugar, malt loaf, eastern spices, coconut, smoke, with a finish reminiscent of Champagne. All these flavors seem to swirl around and yet they’re so easy to enjoy. This isn’t a ploy, this is genuine discovery.
