Honoring over 500 years of tradition, this precious spirit was pot distilled in a single pot only one time. Great pains are taken to produce this terroir-driven shochu made from kogane sengan sweet potatoes grown on site by the distillery. After harvest the potatoes are frozen and the distinct flavor profile becomes concentrated before they are eventually steam cooked and fermented with koji rice. From the 2020 spirit, this is shochu like you've never experienced it.
