Tasting Notes

Truly a luxury Champagne. It is made from free-run juice only and is a barrel-fermented wine. Rich and luscious, with aromas of orange blossom, mint, herbs and spice, this wine has fullness and great depth of flavor. This is a favorite food wine for it's rich and giving.

In the industry we kind of aren't supposed to have favorites. You have to be able to appreciate the different styles, understand what makes even direct opposites appealing, and above all remain non judgmental in matters of taste. Those are all genuinely important. But. Vilmart is my favorite champagne. Under the guidance of 5th generation Laurent Champs they make champagne like no one else. An opulent, richer style fermented in barrel (10mo in large foudres here), the wines nonetheless have real precision from the acidity, undergoing no malolactic. Laurent says, “We do wine first, then afterward we do Champagne,” and I see their vinous nature as the great strength of the house. Yellow plums, cream, almond, and light toast, together with blood orange citrus and exotic spices, even a streak of mineral salinity on the palate.
