Chillable reds are bright, juicy wines that are meant to be enjoyed slightly cool. They tend to be lower in tannins, with vibrant acidity and fresh fruit flavors like cherry, cranberry, and pomegranate. Many are made to be drunk while young, using techniques like carbonic maceration, neutral aging vessels, and gentle extraction to preserve freshness and their silky texture.
Grape varieties that often shine with a chill include Pinot Noir, Zweigelt, Frappato, Gamay, Schiava, Lambrusco (sparkling), and some styles of Grenache and Corvina.
To enjoy at their best, instead of serving straight from the refrigerator, let your bottle sit out for 15–30 minutes before pouring. Drink on their own, or pair with antipasto, grilled seafood, salads, or margherita pizza.
