François is the only producer of still Champagnes from Silléry, a Grand Cru village along the Montagne de Reims not so far from the city of Reims. This rare, still wine from the Champagne region comes from old vine Pinot Noir, displaying a brilliant ruby robe, with a light and charming freshness. This is a blend of many vintages. A spirited offering for any who loves finding the extraordinary.

There are, hidden in small pockets, a few secret places in Champagne where still, not sparkling, wine is made. This far north, the soils and climate most resemble the terroir of Chablis in Burgundy, maybe a bit more extreme. But the wines tend to be fabulously expensive and decidedly average—every one I'd tried until recently (be they white, red, or rosé) were best described as novelties for someone who is already a bit too into wine. But not this one. This one smells like wild cherries, smoked rose petals, bright citrus. It's light bodied but not delicate with balance, length, and precision. And while, yes, it reminds me of a good Burgundy red, it is something entirely its own.
