Staff Pick Notes

Pommeau is crafted by blending Full Proof, newly made Calvados with a cider-apple juice. The cider-apple must is mixed before fermentation with Calvados in the proportion 3/4 must to 1/4 Calvados. As this smooth and natural fermentation ends, the new spirits is aged for 3 to 4 years in oak barrels. The result is a 17% abv elixir that is immensely enjoyable. Notes of a freshly baked, rustic apple pie prevail. Moderately sweet with hints of honey, vanilla, and star anise. This is a dram I can enjoy on the couch after a days work, but equally as enjoyable in the afternoons, serving and sipping alongside friends.
