Por Siempre is an agave-like spirit made from the sotol plant (a.k.a desert spoon, Dasylirion Wheeleri) that thrives in the Chihuahua region of Mexico. The plants for this expression grew completely wild on the slopes of the Sierra Madres Mountains. The local and well-known Perez family have been making the regional spirit for over six generations. Much like great mezcal, the plants are roasted in an earthen pit and left to ferment naturally in the open air prior to double distillation in small copper pot stills. Notes include mixed citrus fruit, white pepper, bell pepper, wood smoke, white peach, moss, minerals, wet stones, and jasmine.
