Mexicano, a precious and increasingly rare species of agave grows primarily in the wild and produces some of the most subtly distinctive mezcal on the planet. When grown wild the plants typically take over a decade to mature and the profile skews towards the earthy and savory. Notes here include sea salt, mixed peppers, fresh pickle, mesquite, bee pollen, dried pineapple, wet clay, sweet limes and a hint of ginger. This is serious, commanding mezcal on a mission. Well worth the price of entry.
