Brand new to the States, the Dopo Teatro has a tradition over a century old as theater goers would congregate at the nearby cafes drink this vermouth amaro chilled and garnished with lemon zest while they recounted and contemplated the evening's affairs. The hybrid name accounts for the double dose of bitterness (quinine in this case) with additional infusions of rhubarb and chiretta flowers. Absolutely wonderful the traditional way this fortified wine is begging for experimentation in cocktails and creative pairings.

"Dopo Teatro"! A wink to the Piedemontese tradition of enjoying a cup of vermouth after seeing performances at the evening theater. The "Cocchi Dopo Teatro Vermouth Amaro" was the first bottle to break my predictable rotation of Campari and Dolin variants when I was first building my at-home-bar collection. Delightfully flexible, anything from Cocchi is always trustworthy, but I found this bottle in particular to be so easy to grab. I love topping off some seltzer water with it while I cook dinner or enjoying it on the rocks for a little evening stroll. Honestly, where it gets the most use in my house is as a direct substitute for sweet vermouth in any cocktails. With a base of Barolo Chinato alongside the macerated botanicals, there is a touch more richness and texture to the profile. -DH
