Made in the northern highlands of Oaxaca where a sparesly inhabited sub-tropical climate produces some of the best sugar cane on earth. Third generation distiller Jose Luis Carrera works with several local varieties of cane grown organically and minimally processed during distillation using only the fresh, lightly pressed cane juice. A true expression of the quality of the cane and the character of the terroir notes here include a pungent green olive brine, wild herbs, fresh baked cornbread, pimento and dried figs. An incredible spirit worthy of any palate. The high proof makes it especially suited for cocktails.

Staff Pick Notes

The name Paranubes can be translated to “above the clouds”. This expression can be applied literally as the rum is harvested and distilled in elevations from 3500 to 5000 feet in the Oaxacan mountains. Figuratively, you can say that distiller Jose Luis Carrera's intentions are that lofty. He makes it a point to name and feature specific varieties of the sugar cane native to his terroir. His entry rum (or as the locals call it aguardiente de caña) is a blend of Caña Criolla, Caña Morada/Negra, Caña Dulce, and Caña Dura. These are grown organically. The juice is fermented naturally then distilled in hybrid pot/column stills. The rum shows nice fruit flavors of bananas and pineapples. When combined with lime juice surprising chile notes pop out. This is the perfect rum to mix with chile based liqueur as Ancho Reyes when you want that spice.
