From a extraordinary independent distiller making rums in the fashion that the great mezcal producers of Oaxaca would with agave, the native cane here is hand harvested, wild fermented and distilled to proof in direct fire pots with absolutely zero adulteration. The rum in this bottle was aged for 28 months entirely in a very rare ex-Caroni Rum cask before being bottled exclusively for us at cask strength in April 2020. A heady spectrum of flavors the mix from tropical fruits, whole spices, smoky earth and minerals. A very special spirit.
We are privileged to have acquired this special bottling of Clairin Rum from Haiti. Michel Sajous is one of three major distillers of this style. It's as traditionally hand crafted as any spirit. His sugar cane grows organically in the mountainous north of Haiti. His harvesting is done entirely by hand. The crushed cane juice is fermented by wild, ambient yeasts, which promotes the ester flavors. This bottling has aged for 28 months in a single cask (sa17cr-4). The rum shows a funky blend of flavors of banana, fruit cake, herbs, and spice. Keep it simple with this rum: a simple daiquiri or a neat pour with ice.
