Distilled by Master Mezcalero Alberto Martinez at his palenque in Santa Catarina Albarradas, these highly concentrated, capon style Espadin agaves are broken down by hand with wooden mallets and fermented at this very high altitude sight with the help of a little local ground bark, and then double distilled in clay pot stills.
The aromas were exotic and beautiful, floral and fruity. Further notes reminded us of lime, avocado leaf, hot stones, minerals supported by a round generous texture and intriguing nectar like finish of butter cream icing. Highly impressive.
