This special style is often high on promise and we find sometimes underwhelming but this, like the other racillas from Estancia overdelivers. The opening notes are full of heady, ripe tropical fruits that transition into funky notes and even some game. A truly wild spirit made with great integrity from 100% Maximiliana agaves, triple distilled in natural earthen clay pot stills.

This is an explosive raicilla, and the fact that it is a pechuga only enhances the experience! Made from the Maximiliana Agave, both the fruit and floral notes seemingly jump out of the glass, with a savory quality that comes from the hanging of a raw turkey breast in the still. The fact that pumpkin seeds, apples, quince, lemon leaves, orange blossom, and more are added in this special recipe allows you to smell and taste something totally unique. On my first experience with this, it reminded me of a unique tropical fruit called Cherimoya that is equally interesting. So many flavors combine together that you will encounter something new every time. If you are considering an agave spirit, this is one I highly recommend!
