Mikheil Chonishvili heads his family's marani that has passed from generation to generation. Working with as little intervention as possible, Rkatsiteli from Tsinandali is fermented and aged on the skins in qvevri for 6 months. This is a structured dry amber wine that is refined and shows restraint. Pair with a hot pot of lobio with mchadi, and pickled jonjoli.

This is one of the amber wines from Georgia that I wait all year for. First experiencing its beauty with Pork Mtsvane at Chito Gvrito, a local Georgian restaurant near Union Square, I couldn’t believe the depth of flavor it brought to the meal. The aromas of wildflower honey, apricots, quince, and freshly roasted nuts jumped out of the glass while the homemade red plum sauce brought a tangy aspect to the charred pork that was absolutely mouthwatering. What a meal and a pairing! Mikheil Chonishvili crafts this wine the old-fashioned way, utilizing wild yeasts, 6 months of skin contact, minimal sulfites, and no filtration. This wine demonstrates the heights that Rkatsiteli can reach even in its youth. Color, depth, texture, and complexity are all here for you to enjoy. Now it’s time for some Georgian food!
