Working with as little intervention as possible, Rkatsiteli from Tsinandali is fermented and aged on the skins in qvevri for 6 months. This is a structured dry amber wine that is refined and shows restraint. Pair with a hot pot of lobio with mchadi, and pickled jonjoli.
