Another absolutely delicious Cabernet Sauvignon from Paso Robles at an unbelievable price, this one from the Pomar district, which sits in the very heart of the Paso Robles AVA. There, the Merill family grow utra-premium grapes, with a focus on sustainable vineyard management, producing award winning wines that speak to the terroir of each site they are grown on. This wine, from estate-grown grapes picked late into the season for perfect ripeness, opens up immediately in a big glass and continues to blossom beautifully. Chocolate covered espresso bean, chilled cherry pie, and silky tannins cuddled up nicely to dry-aged ribeye and blistered shishito peppers with toasted bonito flakes. Not hungry?
