It may sound strange but Pinhook has probably been more responsible in shedding a light on the second coming of the legendary Castle & Key Distillery, originally operated by Colonel E.H. Taylor, than the Castle & Key folks themselves. That's partially because the folks at Pinhook new the role the distillery would play in the future of Bourbon and has been working with them to source, blend and bottle some of their earliest whiskies.
This limited batch was distilled from 75% corn, 15% rye & 10% malted barley - a standard mash that drinks like a new benchmark for what Bourbon made this way and age for this long should taste like. Notes include ripe mandarins, toasted coconut, grated nutmeg, cinnamon, buttered cornbread and candied ginger.
