Although this is an Espadin based mezcal, it is actually one of the rarer spirits that Lalo produces, partially because he typically limits his capon styles to this variety of agave and because he limits how 'overripe' he allows his agaves to get so that he can farm organically easier, without the pressure to use pesticides, etc. Each of these factors mean it may be years in-bewteen batches like this. The mezcal itself is shapeshifting, almost enigmatic, revealing waves of flavors that make you question what you thought an espadin mezcal could be.

Glossary

Quiote

 Stem or flower stalk that extends from the top of the maguey. It is cut to allow the pina to fatten and ripen. The quiote is sweet and can be boiled or roasted, and eaten. Also called quixotl. To remove the stalk (castrate) is called desquiote.
