This native, yet little-grown variety originates in Touraine, and the Puzelats source these grapes from Valérie Forgues. From 100 year-old vines, tended and harvest all by hand, this ferments semi-carbonicalled in large closed top oak vats., which are then opened to complete the process. It spends 8 months in used Burgundy. Pair this lighter-bodied dry and spicy red with duck confit tacos.
