From all of the estate's parcels outside of Chavignol, this is a celebration of the diversity of terroirs of Sancerre. Classically style, 5% of the blend is aged in neutral barrel, and the rest in stainless steel on the lees for 5 month. Aromatic, racy, and medium-bodied, pair this dry white with hake braised in mirin.
