An unpasteurized, undiluted Ginjo made from Yamada Nishiki rice that is rich and fragrant. Niigata prefecture's abundant snowfall provide a superb water source for this historic kura's brews. This dry sake is best enjoyed closer to room temperature in order to best appreciate its aromatics. Pair with chicken curry and rice.

Hakkaisan Brewery, situated at the foot of Mount Hakkai in Niigata, has grown to become one of my favorite brewers and is today recognized as a pinnacle of Sake production in Japan. The current Toji, or brew master, Masato Nagumo grew up living at the sake brewery and is the 4th generation of his family to produce sake at Hakkaisan. This unique expression 'Echigo de Soro' is a celebration of the intensity of the Winter season. Categorized as Nama Genshu, this sake prepared undiluted and unpasteurized. This result is a soft sip on the pallet but amazing long and umami rich finish. A bold and slightly boozy profile is balanaced with an elegant yellow melon and pear flavor. This the ideal sake to sip and share with friends at a special occasion. But don't forget to bring the Chicken Yakitori.
