A project aimed at gathering and elevating the extraordinary fruits of Mexico using the traditions of eau de vie distillation, Edénico brings us the purity and elegance of these beautiful materials.
Made from plantains naturally grown in Santa María Tlalixtac, Oaxaca, the fruit is fermented on champagne lees and double distilled in copper pots. The vivid flavors and pillowy, cloud like texture evoke notes of lime peel, white pepper, marshmallow, banana pudding, vanilla and currants. Use as or mixed into aperitifs or a perfect palate cleansing digestif. You could even enjoy this in the same manner as a great mezcal.
