Back in my early days of wine when I was serving at a small, family-run restaurant in Colorado, we weren't able to bring many "unique" wines in. No pét-nats, no strange Georgian varietals, the most unique thing that we could sell was a South African Sauvignon Blanc! This is a wine that has always stuck with me as a "safety blanket" it is chock-full of minerality, slight salinity and beautiful aromas of lemongrass and the sea. Drink this wine with a rotisserie chicken from the grocery store with super buttery asparagus.
