Amabuki Shuzo has been producing saké in the shadow of Mount Amabuki for over 300 years. This junmai ginjo uses yeast culled from strawberry flowers in lieu of the common commerical yeast used to make most saké. Fruit-forward, floral, with a hint of something wild, the koji is aromatic and refreshing. Pair with yakitori.
