Arguably the whiskey that put this distiller on the map, picking an outrageously good single barrel pick of this was one of the easiest tasks we had all year. Made from a singular sweet mash with no two being the same, this rare wheated mash Bourbon was aged for just under 5yrs (4yrs/7months) in a single custom made heavy char #4 Independent Stave barrel. Bottled at a natural cask strength of 56% abv. - the low 19th Century style barrel entry proof means that you get both more flavor from the aging after fewer years as well as a barrel proof whiskey that is much more easy to sip as is. Plenty of autumn orchard fruits along with figs, browned butter and fresh pastry lead to a seamless, oily and smokey underbelly that shines on the finish.
