Noguchi Naohiko Saké, Honjozo Muroka Nama Genshu

Noguchi Naohiko is known as the God of Sake Brewing, as well as being regarded as one of the Four Guardians of Heaven by the Noto Toji Guild (toji guilds are master brewer groups centered around old farming regions). All of this critical acclaim is for good reason - Naohiko became a toji (master-brewer) at age 28, was a key figure in reviving the extremely difficult Yamahai breweing method of creating sake yeast starters naturally, and even now in his nineties he still leads every brew with his team. Noguchi Naohiko is an incredible sake brewer and this Honjozo bottle is no exception. Enjoy elegant notes of white peach and a hint of caramel balanced with minerality, crisp green pepper, and a clean smooth finish. Truly a work of art.
