Distilled by maestro mezcalero Eleuterio Perez Ramos, this Espadín comes from his own property. Roasted underground in a conical oven with mesquite and oak for 6 days. Hand chopped and hammered, this was dry-fermented for 4 days. Well water was added, and fermentation lasted 12 days. Double distilled in in copper alembic stills.
