Twelve years in the making, we are finally ready to share our Founding Fathers cask that we filled at Dingle in 2013 right as the newly founded distillery has fired up its stills. Aged exclusively in a single first fill Pedro Ximenez Sherry cask and bottled at a natural cask strength. The use of local Irish single malt makes it even more premium and impressive with this amount of sherry influence on the flavor profile. Filled in November 2013 and bottled just shy of its 12th birthday in February 2025. A historic release from what is now arguably Ireland's greatest artisan whiskey maker. The nose and palate are deeply marked with a rich underbelly of malt notes and heavy but evolving decadent sherry flavors that hit on panetone, Christmas spices, old leather, aged tobacco, maraschino cherry preserves and warming spcies.

Staff Pick Notes

I'll bet 50 cents that you've never tried a whiskey like this Dingle 15 year Astor pick. It’s dark and brooding with a hundred tasting notes that reveal themselves in layers upon layers. You’ll first remark on the deep coffee brown hue of the liquid. The nose shows charred vegetables, dried fruit as figs and cherries, coffee, and menthol. The palate also shows sweet sherry, toffee, chocolate, black pepper, and bitter herbs. The first fill barrel leaves a hefty influence from the Pedro Ximenez Sherry, that has to be tasted to believe. 12 years in that barrel has allowed the juice to integrate perfectly with the Sherry. It is a bottle that you’ll remember for a while.
