Ch. Vieux Taillefer "Pavillon de Taillefer," St.-Émilion Grand Cru - 2016

Made from 50 year old Merlot grapes with vines that are planted in clay, limestone and gravel soils. The wine was fermented with wild yeasts in concrete tanks and then aged 12 months in barrel (20% new oak). Château Vieux Taillefer is a 4.8 hectare property and winemaker, Cathérine Cohen, is joined by her husband to run the estate.

A wonderfully concentrated Bordeaux from the family-owned estate of Château Vieux Taillefer. They have 12 acres of vines spread across six different plots of varying soil types. It's this masterful blending that gives the wine such depth in its youth. The nose has fresh herbs, menthol, and stewed berries. On the palate you can taste charred plums, raw cacao, and slate. It's classic right bank Bordeaux. The St. Emilion Grand Cru wines have stricter yields and are aged for a minimum of 14 months before release, unlike other wines in the region. This élevage gives the wine more back bone. It can be held for years or opened now. Decanting is preferred to open up the beautiful layers and textures in the wine.
