Hervé Souhaut makes wine just west of the St.-Joseph sub-region of the northern Rhône Valley. With this wine, he strives at every turn to preserve the natural fruit character of the Syrah grape. Dark berry fruits on the palate lead to violets and eucalyptus on the finish. This is a fresh, unadulterated, profoundly complex red wine.

Across from the highly touted hills of Hermitage, Herve Souhaut works with ancient vines (50-100 years old) with excellent southern exposure and good elevation. Vinifying with drinkability now in mind, Souhaut extracts tannins from the grapes gently to create wines that display delicacy and balance. This is also emphasized through his use of semi-carbonic maceration on whole grape bunches. His Syrah offering is all hand harvested, undergoing a long cold maceration before being fermented in wooden tanks and aged on the lees in used oak barrels for some time. This displays with notes of cool dark berries, violets, lavender, black pepper and that smoky meat Syrah tends to bring forth. With medium tannins balanced out with complimentary acidity, the wine finishes fresh with ripe dark fruit alongside an earthy graphite note.
