Coppersea Astor Barrel Single Malt Rye

We think everything this distillery makes is special but their current peerless pursuit of single malt rye clearly sets them apart and we couldn't help ourselves when picking out our second barrel to dive deeper into these rare stocks. Made from100% local sustainably grown Hudson Valley rye and floor malted and pot distilled at the distillery the spirit was distilled in October 2016 and aged in a 53 gallon char #3 barrel from Kelvin Cooperage. The entire barrel was bottled for us after 3yrs of aging and bottled unblended at a natural cask strength. The flavors seesaw from dates, pecans, figs drizzled with dark honey to earthy dense rye bread, black tea, black peppercorns and baking spices. A dynamic whiskey that is firing on multiple cylinders.

This bottle, for me, is proof that New York Whiskey has truly come into its own. There's always been a lot to like about Coppersea Distillery, a 75 acre farm distillery who grows much of their own grain and sources the rest exclusively from local Hudson Valley growers. They malt their own grain, utilize long, open topped fermentations, and overall have complete control over each step of terroir driven distillation. Our spirits buyer handpicked this barrel from their stocks as damn near perfect. The kind of whiskey that would be a sin to blend with the lesser stuff. This rye, which drinks beautifully at cask strength, is everything I want out of a rye. Immediate notes of espresso beans, black cherry jam, and roasted nuts come together with freshly baked pumpernickel, green apple skins, and baking spice and a rich, full texture.
