Sauvignon Blanc

Few varietals have spawned as bizarre a list of descriptors as Sauvignon Blanc. Believe it or not, “cat pee” is in fact a complimentary tasting note, associated with some of the best bottlings. The high altitude and steep topography of the region exert cooling and humidifying effects, which, along with the highest rainfall in South Australia, contribute to a climate very conducive to leaner, more mineral-driven styles of wine.
