This Champagne is almost weightless. It has a delicate mousse that's like sipping on clouds of ocean air. Mineral notes of silvery shells with the sharpness of tart green pears and limes. It all shimmers with the energy and precision of a good Blanc de Blancs. Jose Dhondt is a family estate of 5 hectares in the Côte des Blancs village of Oger. Dhondt avoids the use of chemicals as much as possible (what the French refer to as "culture raisonnée") and harvests his grapes on the later side to get the ideal ripeness in such a chilly growing region. It's a perfect apéritif to sip on its own. But if you do want to pair, just think seafood. Salmon roe, scallops or lobster in butter sauce would all match effortlessly.
