Chenin Blanc is an incredible varietal because it is able to produce delicious and complex wines in what seems like endless styles including dry, off-dry, sparkling, young, and aged. A defining characteristic of this grape that plays a major role in its ability to be so versatile is its high acidity. It preserves life in aged versions, provides balance to the off-dry, and gives brightness and complexity to younger wines. Cathérine and Didier Champalou give us this delightful Vouvray that is grown sustainably on vines that average 35 years of age which contributes to its depth and complexity. It's kept on its lees for 11 months while it ages in stainless steel. Though technically a dry wine, a hint of sweetness is detected in the tart pear, yellow apple, lemon notes with a touch of florality and spice.
