Finally, spring is here. To celebrate the sunshine and re-awakening of nature, we’ll need something unique and delicious like Txakoli. It might be a little hard to pronounce, but after a few magic glasses you won’t mind. This is a slightly sparkling, very dry white wine with high acidity and low alcohol content produced in Spanish Basque country. It is normally served as an aperitif and traditionally drunk within one year of bottling as it cannot be stored for longer. Flavors of brioche, pear, and lavender shine in the glass with lots of minerality.
