His mindset is that of a professor: respecting heritage grapes, learning through organic practices all to emphasize the native grapes in the final product. Gualandus is pure Sangiovese, fermented in whole bunches, aged in old oak. A robust, complex red wine that is well worth your time.

Beef shins are so awesome. They braise just like Osso Bucco but they’re less than half the price. While their sauce was reducing, I wondered what wine I would pair with them and the twice baked truffle pecorino potatoes warming up in the toaster oven, and it hit me; a whole-cluster Sangiovese that over delivers for the price, just like the beef shins, and, luckily, I had a bottle of this wine ready to go. It’s a searingly good expression of Sangiovese rooted in tradition yet displaying a new world type of intensity. And that’s more than enough for the price, but ten years in the bottle? After forty-five months in Italian oak? It’s a steal. Ripe, dark fruit, full-bodied and wonderfully structured, and if beef shins aren’t your thing, that’s cool, this wine is vegan friendly, they haven’t used animal products in their process since 2006.
