And just like that pet nats have become a thing. Not to be confused with pet gnats, these fizzy wines and their fun, modern branding have really captured a lot of wine-loving hearts. One of my favorites comes from the Pojer e Sandri winery in Trentino in northern Italy, which was founded by two friends Mario and Fiorentino. They make this using the methode ancestrale, whereby fermentation begins in the tank and continues in the bottle, giving the wine a more gentle fizz. The name “zero” comes from the fact that they do nothing to the wine: no herbicides, no pesticides in the vineyard, no added yeast, enzymes, color, or sulfites, and no filtering. It’s extremely fresh and juicy with grapefruit, apple, peach, and floral notes. Super fun and festive on its own or with appetizers.
